2 cups of Milk
1/2 tsp Cinnamon
1/2 tsp Ground nutmeg
1/2 tsp Vanilla bean paste
6 egg yolks
1/2 cup sugar
1 cup thickened cream
1 cup rum
Whipped cream & nutmeg to serve
Method
- In a small saucepan, combine milk, cinnamon, nutmeg and vanilla and heat gently until mix begins to simmer.
- Meanwhile, in a large bowl, combine eggs and sugar & whisk until the yolk turns pale.
- Gradually pour hot milk mixture over the egg mixture, whisking constantly until combined.
- Add in thickened cream & rum and whisk well.
- Place in refrigerator until cold.
- Once cold, pour into cup glasses & top with whipped cream and nutmeg to serve.
