Prawn Rolls

Fresh prawn roll packed with juicy prawns, fresh herbs on a buttery bun.

Ingredients

500g LaManna raw prawns

6 Mini brioche hot dog rolls

1/4 bunch of Chives finely chopped

½ bunch Chervil chopped

150g Kewpie mayo

10g Horseradish

Zest of 1 lemon

Juice of 1 lemon

½ teaspoon Old Bay spice

Salt and cracked black pepper to taste

Method

  1. Bring a pot of water to the boil, season well with salt.
  2. Boil prawns for 3-4 minutes or until cooked, transfer to a strainer and cool immediately under cold water.
  3. Remove tails from the prawns and discard
  4. Meanwhile, mix the remaining ingredients in a bowl and set aside.
  5. Once prawns have completely cooled, roughly dice and transfer to a bowl with the other ingredients, mix well and season with salt and pepper.
  6. Split brioche hot dog buns down the middle.
  7. Fill with the prawn mix and serve immediately.
