500g LaManna raw prawns
6 Mini brioche hot dog rolls
1/4 bunch of Chives finely chopped
½ bunch Chervil chopped
150g Kewpie mayo
10g Horseradish
Zest of 1 lemon
Juice of 1 lemon
½ teaspoon Old Bay spice
Salt and cracked black pepper to taste
Method
- Bring a pot of water to the boil, season well with salt.
- Boil prawns for 3-4 minutes or until cooked, transfer to a strainer and cool immediately under cold water.
- Remove tails from the prawns and discard
- Meanwhile, mix the remaining ingredients in a bowl and set aside.
- Once prawns have completely cooled, roughly dice and transfer to a bowl with the other ingredients, mix well and season with salt and pepper.
- Split brioche hot dog buns down the middle.
- Fill with the prawn mix and serve immediately.
